  • 1 1/4 cup cake flour
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon kosher salt
  • 1 tablespoon almond extract
  • For frosting: 1/2 cup unsalted butter (softened), 1/2 cup heavy cream, 1 1/2 teaspoons almond extract, 4 cups powdered sugar

Instructions

  1. Prepare the egg white mixture by whisking together egg whites, almond extract, and two tablespoons of buttermilk in a small bowl; set aside.

  3. Combine dry ingredients—cake flour, baking powder, and salt—with the creamed mixture; mix gently.
  4. Gradually add the egg white mixture and remaining buttermilk to the batter; mix until just combined.
  5. Fill cupcake liners halfway with batter and bake in a preheated oven at 350°F for 15-17 minutes or until lightly golden.
