  • ½ cup sour cream
  • ⅓ cup brown sugar

  • 3 medium apples, peeled and sliced
  • ¼ cup light brown sugar
  • 1 tsp ground cinnamon
  • ¼ cup rolled oats

Instructions

  1. Preheat oven to 325°F (163°C). Mix graham-cracker crumbs, sugar, and melted butter in a bowl; press into a springform pan. Bake for 8–10 minutes.
  2. In another bowl, whisk cream cheese until smooth. Add brown sugar, sour cream, vanilla extract, and eggs; mix until combined.
  3. Pour the cheesecake batter over the crust. Toss apples with light brown sugar and cinnamon; layer on top.
  4. Bake for 35–40 minutes until edges are set but center jiggles slightly. Cool in the oven for an hour.
  5. Chill overnight in the refrigerator.
  6. For the crumble topping, mix oats with melted butter and sprinkle on top before baking at 375°F (190°C) for an additional 12–15 minutes.
  7. Allow to rest before slicing; serve warm or at room temperature.
