  • 5 medium apples (peeled, cored, chopped)
  • 1/3 cup brown sugar
  • 2 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon fresh lemon juice
  • 1 cup water
  • 2 tablespoons cornstarch
  • 8 flour tortillas
  • Non-stick cooking spray

Instructions

  1. In a saucepan over medium heat, combine chopped apples, brown sugar, granulated sugar, cinnamon, lemon juice, and water. Stir gently until simmering; let cook until apples soften.
  2. Mix cornstarch with a little water in a small bowl until smooth; stir into the apple mixture to thicken. Simmer for another few minutes.
  3. Preheat oven to 350°F (175°C). Cut tortillas into triangles and arrange on a baking sheet. Spray with cooking spray and sprinkle with cinnamon-sugar mix. Bake for about 10 minutes or until golden.
