  • 6 small flour tortillas
  • ⅓ cup salted butter, melted
  • ¾ cup crushed vanilla wafers
  • 1 tsp ground cinnamon
  • 20 oz canned apple pie filling or sautéed fresh apples
  • ¼ cup heavy cream or full-fat coconut milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brush both sides of each tortilla with melted butter.
  3. Coat tortillas in a mixture of crushed vanilla wafers and cinnamon.
  4. Let the coated tortillas rest for 5 minutes on a wire rack.
  5. Shape tortillas over the bars of the oven rack or an upside-down muffin tin and bake for 8-10 minutes until golden brown.
  6. Heat apple pie filling with heavy cream in a saucepan until warmed through.
  7. Fill each taco shell with the apple mixture and top with whipped cream and caramel sauce if desired.
