  • 2 green apples, sliced
  • 12 teaspoons lemon juice
  • 1/3 cup dried cranberries
  • 1/2 cup crumbled gorgonzola cheese (or dairy-free alternative)
  • 1/2 cup toasted walnut pieces
  • Optional: thinly sliced red onion
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon freshly ground black pepper
  • 2 Tablespoons sugar (or maple syrup, or honey)

Instructions

  1. Whisk together olive oil, apple cider vinegar, Dijon mustard, garlic powder, oregano, basil, black pepper, and sugar to make the vinaigrette.
  2. Toast walnuts in a dry skillet over medium heat for 3–5 minutes until fragrant (optional).
  3. Toss sliced apples with lemon juice to prevent browning.
  4. In a large bowl, combine mixed greens, apples, cranberries, gorgonzola cheese, toasted walnuts, and optional red onion.
  5. Drizzle half the vinaigrette over the salad and toss gently. Serve immediately.
