  • 3 tablespoons soy sauce or coconut aminos
  • 3 tablespoons olive oil
  • ½ cup balsamic vinegar
  • 3 large zucchini
  • 8 ounces feta cheese
  • 3 tablespoons heavy cream or milk

Instructions

  1. Combine Dijon mustard, minced garlic, onion powder, soy sauce, olive oil, and balsamic vinegar in a bag or dish. Season flank steak with salt and pepper; marinate for at least 2 hours.
  2. Preheat grill to 450°F. Grill steak for 3-5 minutes per side until medium-rare (135°F). Grill zucchini slices until tender.
  3. Allow steak to rest for 10 minutes before slicing thinly against the grain.
  4. Simmer reserved marinade to create a balsamic glaze and whip feta with cream until smooth.
