  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and chop the sweet potatoes into 1/2" chunks and the onion into 1-inch pieces. Toss them on a lined sheet pan with olive oil, salt, garlic powder, and chipotle powder.
  3. Roast the sweet potato mixture for about 20 minutes until tender.
  4. Add broccoli florets to the pan along with the chicken breasts brushed with 1/4 cup BBQ sauce.
  5. Bake for an additional 15-20 minutes until chicken is fully cooked.
