Ingredients

Scale
  • 1 pound boneless skinless chicken breasts
  • 2 medium sweet potatoes (peeled and diced)
  • ½ cup BBQ sauce
  • 1 avocado (diced)
  • ½ cup canned corn (drained)
  • ½ cup black beans (rinsed and drained)
  • 2 tablespoons olive oil (divided use)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C). Season chicken breasts with salt, pepper, paprika, and garlic powder.
  2. Toss diced sweet potatoes with olive oil and season with salt and pepper on a baking sheet.
  3. In a skillet over medium heat, sear seasoned chicken for 5-7 minutes on each side until golden brown. Brush BBQ sauce over both sides of the chicken.
  4. Transfer the chicken to the oven alongside sweet potatoes and bake for about 20 minutes until cooked through (internal temperature of 165°F/74°C).
  5. Let the chicken rest before slicing into strips. Assemble your bowls by layering roasted sweet potatoes first, followed by sliced chicken and desired toppings.
