  • 2 tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt (more for larger filets)
  • 2 tablespoons olive oil
  • 2 mangoes, diced
  • 1 avocado, diced
  • 1/4 cup minced cilantro
  • 1/4 cup minced red onion
  • 1/2 jalapeño, minced (optional, to taste)
  • 1 teaspoon honey
  • 2 tablespoons lime juice + 1 teaspoon lime zest
  • Salt to taste
  • 1 1/2 cups of rice

Instructions

  1. Prepare the salsa by mixing diced mangoes, avocado, cilantro, red onion, jalapeño (if using), honey, lime juice, and zest in a bowl. Adjust seasoning to taste.
  2. Cook rice according to package instructions as the base for the bowls.
  3. Preheat the oven to 475°F (or broil at 500°F) and line a baking sheet with foil.
  4. Mix brown sugar, smoked paprika, onion powder, garlic powder, chili powder, salt, and olive oil into a paste. Rub over salmon fillets placed skin-side down on the baking sheet.
  5. Bake salmon for about 6-12 minutes until cooked through. Flake over rice and top with salsa before serving.
