  • 250 g digestive or graham crackers
  • 75 g butter
  • 300 g fresh blueberries
  • 800 g full-fat cream cheese (room temperature)
  • 200 g sour cream (18% room temperature)
  • 4 large eggs
  • 80 g dark brown sugar
  • 260 g granulated sugar
  • 110 g all-purpose flour
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract
  • 1 tbsp granulated sugar
  • 1 tbsp all-purpose flour
  • 2 tsp lemon juice

Instructions

  1. Prepare the crust by crushing crackers and mixing them with melted butter and sugar. Press into the bottom of a springform pan.
  2. For the blueberry topping, combine fresh blueberries with sugar, flour, and lemon juice; toss gently.
  3. Beat cream cheese with brown sugar until smooth; add in sour cream, cornstarch, vanilla extract, and eggs one at a time until fully incorporated.
  4. Layer half of the cheesecake filling over the crust, followed by the blueberry mixture, then top with remaining filling.
  5. Bake until slightly jiggly in the center, then cool gradually before refrigerating for several hours.
