  • 2 heads broccoli (about 1 and 1/2 pounds)
  • 1 cup cooked chicken (diced)
  • 1 cup dried cranberries
  • 1/3 cup roasted sunflower seeds
  • 1 cup cheddar cheese (shredded)
  • 1/3 cup chopped red onion
  • 1 & 1/4 cups mayonnaise
  • Zest from 1 lemon
  • 1 tablespoon lemon juice
  • 2 tablespoons white grape juice vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Chop broccoli into small florets. If desired, include chopped stems for added texture.
  2. In a large bowl, mix together mayonnaise, lemon zest, lemon juice, white grape juice vinegar, sugar, salt, pepper, dry mustard, and cayenne pepper until smooth.
  3. Add the chopped broccoli, diced chicken, dried cranberries, sunflower seeds, cheddar cheese, and most of the red onion to the dressing. Stir gently until everything is well-coated.
  4. Chill the salad for at least 20 minutes before serving to enhance flavors.
