  • 2/3 cup cooked, mashed butternut squash
  • 1/2 pound mezzi rigatoni (or any small pasta)
  • 1 1/4 cup shredded cheddar cheese
  • 3/4 cup shredded smoked gouda cheese
  • 1/2 cup shredded parmesan cheese
  • 1/4 cup unsalted butter
  • 1/4 cup flour
  • 2 cups milk
  • Salt
  • Ground nutmeg
  • Black pepper
  • Tabasco sauce

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. In a saucepan over medium heat, melt the butter. Whisk in the flour until smooth, then gradually add the milk while whisking to avoid lumps. Cook until thickened (about 5-7 minutes).
  3. Stir in the cheeses until melted, then season with salt, nutmeg, pepper, and tabasco sauce.
  4. Fold in the cooked pasta and mashed butternut squash until well-coated.
  5. Transfer to a greased baking dish. If desired, sprinkle breadcrumbs on top for crunch. Bake at 350°F (175°C) for 20-25 minutes until bubbly and golden.
