  • 4 to 6 bone-in skin-on chicken thighs
  • 1 teaspoon allspice
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 2 cups long-grain rice
  • 1 onion, chopped
  • 1 scotch bonnet or habanero pepper, diced
  • 3 cups chicken broth
  • 1 lime, juiced
  • 2 tablespoons vegetable oil

Instructions

  1. Season the chicken thighs with allspice, salt, pepper, minced garlic, and thyme. Marinate for at least 30 minutes.
  2. In a large skillet, heat vegetable oil over medium-high heat. Sear the chicken skin-side down until golden brown (about 4-5 minutes per side). Remove from pan.
  3. In the same skillet, sauté chopped onion, minced garlic, and diced pepper until softened.
  4. Stir in rice until coated with the aromatics. Add chicken broth and bring to a simmer. Return seared chicken to the pot.
  5. Cover and cook on low heat for about 20 minutes or until rice is fluffy. Fluff rice with a fork and squeeze fresh lime juice before serving.
