  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup finely grated carrot (about 23 medium carrots)
  • 1/3 cup shredded sweetened coconut
  • 1/2 cup unsalted butter, softened
  • 1/4 cup cream cheese, chilled
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the unsalted butter in a saucepan until golden and fragrant.
  3. In a mixing bowl, combine both sugars, egg, and vanilla; mix well.
  4. In another bowl, whisk together flour, oats, baking soda, and spices, then combine with the wet mixture.
  5. Fold in grated carrots and shredded coconut until evenly distributed.
  6. Scoop tablespoons of dough onto lined baking sheets and bake for 10 minutes until edges are golden.
  7. Cool cookies on wire racks before frosting.
  8. For the buttercream, beat softened butter and chilled cream cheese until smooth; gradually add powdered sugar.
  9. Spread cream cheese buttercream between two cookies to create sandwiches.
