  • ½ teaspoon kosher salt
  • ⅓ cup olive oil
  • ¼ cup apple vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon Dijon mustard

  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon minced fresh rosemary
  • 1 teaspoon ground pepper

  1. Trim the skirt steak, removing excess fat and silverskin.
  2. Season with kosher salt and place in a resealable bag.
  3. In a bowl, whisk together olive oil, apple vinegar, soy sauce, Dijon mustard, minced garlic, thyme, rosemary, and ground pepper; pour over the steak.
  4. Seal the bag tightly and massage the marinade into the meat; refrigerate for 2-12 hours.
