  • 1 tablespoon taco seasoning
  • 1 package (9 oz) cheese tortellini
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce
  • 1/2 cup sour cream
  • Olive oil for cooking

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent (3–4 minutes).
  2. Add minced garlic; cook for another minute.
  3. Brown the ground beef (5–7 minutes) until fully cooked.
  4. Stir in black beans, diced tomatoes, and taco seasoning; simmer for 5 minutes.
  5. Cook tortellini according to package instructions; drain.
  6. Preheat oven to 350°F (175°C).
  7. Combine cooked tortellini with beef mixture in a bowl.
  8. Spread enchilada sauce at the bottom of a baking dish; layer in the tortellini-beef mix.
  9. Pour remaining enchilada sauce over the top and sprinkle with cheddar cheese.
  10. Cover with foil and bake for 20 minutes; uncover and bake an additional 10–15 minutes until bubbly.
