  • 1/3 cup brown sugar

  • 1/4 cup cold unsalted butter, diced

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, whisk together 1 3/4 cups flour, 1/2 cup sugar, 2 teaspoons baking powder, and 1/4 teaspoon salt.
  3. In another bowl, mix together 1/2 cup milk, 1/3 cup vegetable oil, 1 large egg, and 1 teaspoon vanilla until combined.
  4. Pour wet ingredients into dry ingredients; stir gently until just mixed. Fold in 1 cup pitted cherries.
  5. For the topping: combine 1/2 cup flour, 1/3 cup brown sugar, and 1/2 teaspoon cinnamon in a small bowl. Cut in 1/4 cup diced cold butter until crumbly.
  6. Spoon muffin batter into prepared tin (about two-thirds full) and sprinkle topping over each muffin.
  7. Bake for 20–25 minutes or until a toothpick comes out clean.
  8. Allow muffins to cool in the pan for five minutes before transferring them to a wire rack.
