  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Zest and juice of 1 lemon
  • 1 pound baby potatoes, halved
  • 1 cup baby carrots
  • 1 red onion, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, garlic, rosemary, thyme, lemon zest and juice, salt, and pepper.
  3. Coat chicken thighs with half of the herb mixture in a large bowl.
  4. Toss potatoes, carrots, and onion in the remaining herb mixture in another bowl.
  5. Arrange vegetables on a baking sheet and place chicken on top.
  6. Roast for 35-40 minutes until chicken reaches an internal temperature of 165°F (74°C).
  7. Broil for an additional 2-3 minutes for crispy skin.
  8. Let rest for 5 minutes before serving.
