  • 2 tablespoons olive oil
  • 1/2 cup black beans (rinsed and drained)
  • 1/2 cup corn
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green onions
  • 1 jalapeno pepper (diced)
  • 2 tablespoons fresh cilantro (chopped)
  • 1/3 cup frozen spinach (thawed and chopped)
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon cayenne pepper
  • 1 cup Monterey Jack cheese (shredded)
  • 1012 egg roll wrappers
  • Oil for frying
  • 1/2 cup ranch dressing
  • 1 medium ripe avocado (mashed)
  • 2 tablespoons buttermilk
  • 2 tablespoons chopped fresh cilantro
  • 1 & 1/2 teaspoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. In a large bowl, combine shredded chicken, black beans, corn, bell pepper, green onions, jalapeno, cilantro, spinach, cumin, chili powder, salt, cayenne pepper, and Monterey Jack cheese.
  2. Take an egg roll wrapper and place about two tablespoons of filling in the center. Moisten edges with water and fold it over the filling, sealing tightly.
  3. Heat oil in a deep skillet over medium-high heat. Fry eggrolls in batches until golden brown (about 3-4 minutes per side).
  4. For the dipping sauce, whisk together ranch dressing, mashed avocado, buttermilk, cilantro, lime juice, salt, garlic powder, and onion powder.
  5. Serve warm with the dipping sauce.
