  • 100 grams granulated sugar
  • 100 grams almond flour
  • 100 grams powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup butter
  • 1/3 cup peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Create a Swiss meringue by combining egg whites and granulated sugar over a double boiler until frothy. Whip until stiff peaks form.
  3. Sift almond flour, cocoa powder, and powdered sugar together, then gently fold into the meringue until combined.
  4. Pipe small circles onto prepared baking sheets and let them rest for about 10 minutes.
  5. Bake macarons for approximately 13 minutes, turning halfway through.
  6. While cooling, prepare the filling by beating together butter and peanut butter before adding powdered sugar, vanilla extract, and salt.
  7. Assemble by piping filling onto half of the shells and topping with the remaining ones.
