  • 4 tbsp taco seasoning
  • 2 onions, quartered
  • ½ cup orange juice
  • ½ cup beef stock
  • Small flour tortillas
  • Guacamole (1 recipe)
  • Your favorite salsa

Instructions

  1. Preheat your oven to 325°F (163°C). Season the chuck roast generously with salt, pepper, and taco seasoning.
  2. Place the seasoned roast in a Dutch oven with orange juice, beef stock, and onions. Cover tightly and bake for 3.5 to 4 hours until tender.
  3. Remove the roast and shred it using two forks. If necessary, return it to the oven for another 30 minutes.
  4. Increase oven temperature to 425°F (218°C). Spread shredded meat on a baking sheet and crisp for 15-25 minutes.
  5. Meanwhile, prepare guacamole and char tortillas over an open flame. Assemble tacos with guacamole, shredded meat, and salsa.
