- 2 tablespoons protein powder (optional)
- 1/4 cup cashew butter (or any nut/seed butter)
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup
- 1 1/2 cups chocolate chips
- 2 tablespoons coconut oil
- In a mixing bowl, combine non-dairy yogurt, nut butter, maple syrup, and protein powder (if using). Mix until smooth.
- Fold in mini chocolate chips gently to maintain their shape.
- Scoop dollops of the mixture onto a lined baking sheet, spacing them apart to freeze evenly. Place in the freezer for at least one hour.
- While freezing, melt chocolate chips with coconut oil until smooth.
- Once bites are solidified, dip each into the melted chocolate, ensuring they are well-coated before returning them to the baking sheet.
- Freeze again for at least 30 minutes until chocolate hardens.
