  • 4 large ears of fresh corn
  • 1 ½ cups diced bell pepper
  • 1 pint cherry tomatoes (halved)
  • 1 cup English cucumber (diced)
  • ½ cup red onions (finely diced)
  • ¾ cup fresh Cotija cheese (or substitute)
  • 3 tablespoons avocado oil
  • ¼ cup lime juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder

Instructions

  1. Cook the corn by boiling for about 5 minutes or grilling until tender. Let cool before removing kernels.
  2. Dice bell peppers, cucumber, cherry tomatoes, red onions, and cilantro into bite-sized pieces.
  3. In a small bowl, whisk together avocado oil, lime juice, apple cider vinegar, honey, Dijon mustard, salt, parsley, black pepper, cumin, garlic powder, and chili powder to make the dressing.
  4. In a large mixing bowl, combine corn kernels and diced veggies. Pour the dressing over and toss until well coated.
  5. Serve chilled or at room temperature for best flavor.
