  • 1/3 cup sugar
  • 2 tablespoons water
  • 8 ounces cream cheese (softened)
  • 1 tablespoon vanilla paste
  • 8 ounces whipped topping (thawed)
  • 2 cups gingersnap crumbs
  • 5 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Butter a 10-inch pie plate. Mix gingersnap crumbs with melted butter and press firmly into the bottom and sides of the pie plate.
  3. In a saucepan, combine cranberries, sugar, and water. Boil while stirring until thickened (about 15 minutes). Let cool.
  4. Puree the cooked cranberries in a blender until smooth. Chill the puree.
  5. Blend chilled cranberry puree with softened cream cheese and vanilla paste until smooth.
  6. Gently fold in the thawed whipped topping until no streaks remain.
  7. Spread the mousse into the prepared crust and chill for several hours or overnight to set.
  8. Garnish with whipped topping, sugared cranberries, and mint leaves before serving.
