  • 1 lb fresh, skinless salmon fillets, cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha, adjust to taste
  • 1 tbsp honey
  • 1 tbsp lime juice

Instructions

  1. Cut the salmon into 1-inch cubes and pat dry with paper towels.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko mixed with garlic powder, onion powder, paprika, salt, and pepper.
  3. Coat each salmon cube in flour, dip in egg mixture, then roll in the seasoned panko.
  4. Heat vegetable oil in a skillet over medium heat and fry the salmon bites until golden brown (about 2-3 minutes per side).
  5. In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice for the sauce.
  6. Serve the crispy bites warm with the bang bang sauce on top or on the side.
