- 1 lb fresh, skinless salmon fillets, cut into 1-inch cubes
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- Vegetable oil, for frying
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tbsp sriracha, adjust to taste
- 1 tbsp honey
- 1 tbsp lime juice
- Cut the salmon into 1-inch cubes and pat dry with paper towels.
- Set up three bowls: one with flour, one with beaten eggs, and one with panko mixed with garlic powder, onion powder, paprika, salt, and pepper.
- Coat each salmon cube in flour, dip in egg mixture, then roll in the seasoned panko.
- Heat vegetable oil in a skillet over medium heat and fry the salmon bites until golden brown (about 2-3 minutes per side).
- In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice for the sauce.
- Serve the crispy bites warm with the bang bang sauce on top or on the side.
