  • Mayonnaise (or Greek yogurt)
  • Dijon mustard
  • 1 beaten egg
  • Breadcrumbs
  • Green onions
  • Red bell pepper
  • Fresh lemon juice
  • Old Bay seasoning
  • Salt and pepper
  • Egg roll wrappers
  • Vegetable oil

Instructions

  1. In a large bowl, gently mix lump crab meat, mayonnaise, Dijon mustard, beaten egg, breadcrumbs, green onions, red bell pepper, lemon juice, Old Bay seasoning, salt, and pepper until combined.
  2. Lay an egg roll wrapper on a clean surface with one corner facing you. Spoon about two tablespoons of crab filling into the center. Fold the nearest corner over the filling tightly and tuck in the side corners before rolling away from you to seal.
  3. Heat vegetable oil in a deep skillet over medium-high heat until it reaches 350°F (175°C).
  4. Fry each egg roll in batches for 3–4 minutes per side until golden brown and crispy.
  5. Remove from oil and drain on paper towels before serving warm.
