  • 5 medium Apples (peeled, cored, and chopped)
  • 1/4 cup Brown Sugar
  • 1/2 teaspoon Nutmeg
  • 1 tablespoon Lemon Juice
  • 1 cup Rolled Oats (or quick oats)
  • 1/2 cup Flour

Instructions

  1. Preheat oven to 325°F (160°C). Combine crushed graham crackers, sugar, cinnamon, and melted butter in a bowl. Press the mixture firmly into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Add sour cream, eggs, cornstarch, and vanilla extract; mix until well combined. Pour over the prepared crust.
  3. For the topping, mix chopped apples with brown sugar, nutmeg, and lemon juice; spread evenly over the cheesecake filling.
  4. Prepare the crumble by combining rolled oats, flour, brown sugar, and cinnamon in a bowl; sprinkle over the apple layer.
  5. Bake for about 60 minutes until set around the edges but slightly jiggly in the center. Turn off the oven and leave cheesecake inside for an additional hour.
  6. Cool at room temperature before refrigerating for at least four hours or overnight before serving.
