  • 1 lb fresh strawberries, hulled and sliced
  • 3/4 cup broken or roughly chopped pecans
  • 5 oz feta cheese, crumbled
  • 1/3 small red onion, thinly sliced
  • 1/2 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 Tbsp dijon mustard
  • 1 Tbsp honey
  • 1 1/2 Tbsp brown sugar
  • 1/2 Tbsp butter
  • Salt and freshly ground black pepper

Instructions

  1. Prepare the dressing: In a bowl or jar, whisk together 1/2 cup balsamic vinegar, 1/2 cup olive oil, 1 Tbsp Dijon mustard, and 1 Tbsp honey. Season with salt and pepper.
  2. Toast the pecans: In a skillet over medium heat, melt 1/2 Tbsp butter. Add 3/4 cup chopped pecans and 1 1/2 Tbsp brown sugar; toast for about 3-5 minutes until golden brown.
