  • 2.5 ml citric acid
  • 1 tsp vanilla sugar
  • 125 g cold-brewed Earl Grey tea
  • 50 g oil
  • 100 g lavender sugar with lemon
  • 1 egg (or substitute with flaxseed meal mixture for vegan option)

Instructions

  1. Preheat your oven to 175°C (convection).
  2. Grease a silicone muffin tin with oil or baking spray and dust lightly with sugar.
  3. In one bowl, whisk together the dry ingredients (flour, baking soda, citric acid, vanilla sugar, salt).
  4. In another bowl, mix the wet ingredients (cold-brewed tea, oil, lavender sugar, egg).
  5. Gently fold the wet mixture into the dry until just combined; do not overmix.
  6. Fill the muffin tin two-thirds full and top with optional lavender sugar or chopped nuts.
  7. Bake for 17-20 minutes until golden brown; check with a toothpick for doneness.
  8. Allow cooling in the tin for 20 minutes before transferring to a wire rack.
