  • 12 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup crumbled cotija cheese (or feta)
  • 2 tablespoons finely diced red onion
  • 1 tablespoon finely diced jalapeño (optional)
  • 2 tablespoons chipotle mayo
  • Paprika for garnish

Instructions

  1. Boil the eggs in a saucepan covered with cold water; bring to a boil, then simmer for 10-12 minutes.
  2. Cool the eggs under cold water, then peel carefully.
  3. Slice each egg in half lengthwise and scoop out yolks into a bowl. Mash yolks until smooth.
  4. Mix in mayonnaise, sour cream, cilantro, lime juice, chili powder, garlic powder, salt, and pepper until well combined.
  5. Spoon or pipe yolk mixture into egg whites.
  6. Top each with crumbled cheese, red onion, jalapeño (if using), and drizzle with chipotle mayo.
  7. Garnish with paprika before serving.
