  • 3 tbsp sugar (or granulated sugar-free sweetener)
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon or pumpkin pie spice
  • 1/3 cup pumpkin puree
  • 1 egg (or flax egg)
  • Optional: mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In one bowl, combine almond flour, sugar, baking powder, salt, and spices.
  3. In another bowl, whisk together pumpkin puree and the egg (or flax egg).
  4. Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix.
  5. If desired, fold in mini chocolate chips.
  6. Fill each muffin cup about three-quarters full and bake for 10 minutes for mini muffins or 15 minutes for larger ones until golden brown.
  7. Let cool in the tin briefly before transferring to a wire rack.
