  • 1/4 cup creamy peanut butter
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1 cup dark chocolate chips for coating
  • 1 teaspoon coconut oil (optional, for smoother melting)
  • Crushed peanuts (optional topping)
  • Sea salt flakes (optional topping)
  • Shredded coconut (optional topping)

Instructions

  1. In a mixing bowl, combine Greek yogurt, peanut butter, honey, and vanilla extract until smooth. Fold in mini chocolate chips.
  2. Line a baking sheet with parchment paper and scoop tablespoon-sized portions onto it. Flatten slightly.
  3. Melt dark chocolate chips (and coconut oil if using) in intervals until smooth.
  4. Dip each frozen disc into melted chocolate and place back on the baking sheet. Add desired toppings while wet.
  5. Freeze for another 15-20 minutes until the chocolate is set.
  6. Store in an airtight container in the freezer.
