  • 1 lb sirloin steak or steak tips
  • 2 cups cheese tortellini
  • 2 cups shredded sharp cheddar cheese
  • 1 cup beef broth
  • 3 cloves garlic
  • 2 cups milk
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • Salt & black pepper to taste
  • 1 tsp Dijon mustard (optional)
  • 1 tsp paprika
  • ½ cup shredded mozzarella for topping
  • 2 tbsp chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Season steak pieces with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the steak for 2–3 minutes on each side until browned. Remove from skillet.
  2. In the same skillet, melt butter over medium heat, add minced garlic, and cook until fragrant. Stir in flour to form a roux; gradually whisk in milk and beef broth until smooth. Mix in shredded cheddar cheese until creamy.
  3. Cook tortellini according to package directions but slightly undercook them; drain and toss with olive oil.
  4. Grease a baking dish, combine cooked tortellini, seared steak, and cheese sauce. Mix gently and top with shredded mozzarella.
  5. Bake uncovered for 20–25 minutes until bubbly and golden brown. Garnish with parsley before serving.
