  • 2 Boneless, Skinless Chicken Breasts
  • 1 Cup Cooked Brown Rice
  • 2 Cups Mixed Greens
  • ½ Cup Black Beans
  • ½ Cup Canned Corn
  • ⅓ Cup Cherry Tomatoes
  • 2 tablespoons Greek Yogurt
  • Fresh Lime Juice
  • Cilantro
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh lime juice
  • ½ teaspoon Paprika
  • ½ teaspoon Ground Cumin
  • ¼ teaspoon Chili Powder
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • ¼ teaspoon Dried Oregano
  • A pinch of sea salt and freshly ground black pepper

Instructions

  1. Prepare the chicken marinade by mixing olive oil, lime juice, paprika, cumin, chili powder, garlic powder, onion powder, oregano, salt, and pepper in a ziplock bag. Add chicken breasts and marinate for at least one hour.
