  • 4 large whole wheat tortillas
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 8 ounces fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.
  2. In a large bowl, toss zucchini, bell pepper, onion with olive oil, salt, pepper, oregano, and basil.
  3. Grill seasoned veggies for 5-7 minutes until tender and marked.
  4. Sauté garlic in olive oil until fragrant; add spinach until wilted.
  5. On each tortilla half, layer grilled veggies, sautéed spinach, tomatoes, feta, and mozzarella; fold.
  6. Grill quesadillas for 3-4 minutes per side until golden brown.
  7. Slice into wedges and serve warm.
