  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
  • 1 cup frozen corn, thawed
  • ½ cup red onion, diced
  • ¼ cup cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt to taste
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp cilantro, chopped
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 avocado, sliced or mashed
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish

Instructions

  1. Marinate shrimp in olive oil, paprika, garlic powder, salt, black pepper, and cayenne (if using) for a few minutes.
  2. In a bowl, combine thawed corn, red onion, minced jalapeño (optional), cilantro, lime juice, and salt to prepare the corn salsa.
  3. Preheat the grill over medium heat and cook marinated shrimp for about 2–3 minutes on each side until pink and opaque.
  4. In another bowl, whisk together mayonnaise, sour cream, cilantro, lemon juice, minced garlic, salt, and black pepper to create the creamy garlic sauce.
  5. Assemble bowls with layers of corn salsa followed by grilled shrimp and avocado. Drizzle with creamy garlic sauce.
  6. Garnish with sesame seeds and chopped green onions before serving.
