  • 1/4 cup plain Greek yogurt
  • 1 garlic clove, minced
  • 1/4 tsp sea salt

  • 1/2 tsp dried oregano or thyme
  • 2 tbsp fresh parsley or dill, chopped
  • Olive oil for pan-frying

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean dish towel.
  2. In a mixing bowl, combine drained zucchini with eggs, flour, herbs/spices, and Greek yogurt; mix until well combined.

  5. Transfer cooked fritters to paper towels to drain excess oil before serving warm.
