  • 1/4 cup sugar
  • 1 cup all-purpose flour
  • pinch of salt
  • 1 tsp vanilla bean paste
  • 1/2 cup fresh squeezed lemon juice
  • 1 Tbsp dried hibiscus or hibiscus tea
  • 3 large eggs or plant-based alternative
  • 1 1/2 cups sugar
  • 1/2 cup flour
  • confectioner's sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together unsalted butter and sugar until light and fluffy, then add vanilla bean paste.
  3. Mix in flour and salt until just combined; press into a baking pan and chill for 15 minutes.
  4. Bake the crust for about 15 minutes until lightly browned.
  5. Combine dried hibiscus with fresh lemon juice; let sit for 15 minutes before straining.
  6. In a separate bowl, whisk together eggs and sugar until smooth; mix in strained lemon-hibiscus juice and flour.
  7. Pour filling over the baked crust and return to the oven, baking for 20–25 minutes until set.
  8. Cool completely before slicing and dust with confectioner's sugar before serving.
