  • 1/3 cup all-purpose flour
  • 1/2 cup chilled unsalted butter
  • 6 to 8 large apples (Granny Smith or Honeycrisp)
  • 1/3 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 4 tablespoons cold unsalted butter, cut into 1/4-inch dice
  • 1 TBSP plus 1 tsp cornstarch
  • 2 tsp alcohol-free vanilla extract
  • 1 tsp dry pectin or an extra 1/2 tsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp kosher salt
  • 1 cup brown sugar
  • 1/2 cup light corn syrup
  • 3 tbsp unsalted butter
  • 1 1/2 tsp kosher salt
  • 1/2 cup heavy cream
  • 1 TBSP spiced vanilla extract (alcohol-free)

Instructions

  1. Make the crust by combining flour, salt, and sugar in a food processor. Add chilled butter and pulse until crumbly. Gradually add ice water until dough forms; chill for at least an hour.
  2. Prepare the crumb topping by mixing sugars, cinnamon, salt, and flour in the food processor. Add cold butter and pulse until crumbly. Refrigerate.
  3. Sauté sliced apples in two pans with sugar until tender but firm; let cool slightly.
  4. Combine sautéed apples with brown sugar, cornstarch, spices, butter, and vanilla extract.
  5. Assemble the pie by rolling out the dough into a deep-dish pan; fill with apple mixture and top with crumble.
  6. Bake at 350°F (175°C) for about 30 minutes uncovered then cover loosely with foil for another 30 minutes until golden brown.
  7. For the sauce, whisk brown sugar, corn syrup, butter, and salt in a skillet until bubbling; add cream.
