  • 1/4 cup honey
  • Zest and juice of 1 lime

  3. In another bowl, mix buttermilk, melted butter, and eggs until well combined.
  4. Combine wet and dry ingredients gently until just mixed; avoid overmixing.
  5. Fold in corn kernels, jalapeños, and cheddar cheese.
  6. Pour batter into the prepared dish and bake for 25-30 minutes until golden brown.
  7. While baking, whisk together honey with lime zest and juice to make the glaze.
