  • 4 yellow peaches
  • 3 medium jalapeno peppers
  • 2 tablespoons extra virgin olive oil
  • ½ cup peach preserves
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • ⅛ teaspoon red pepper flakes
  • 15 wooden skewers (soaked in water for 30 minutes)

Instructions

  1. Soak wooden skewers in water for 30 minutes.
  2. Cut chicken into 1-inch cubes and prepare the peaches and jalapenos.
  3. Marinate chicken with salt, pepper, chili powder, and olive oil for at least 30 minutes.
  4. Assemble skewers by alternating pieces of chicken, peach halves, and jalapeno chunks.
  5. Prepare glaze by mixing peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes.
  6. Preheat air fryer to 400°F (200°C) and cook skewers for about 10-11 minutes, brushing with glaze.
