  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons gochujang
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice (white or brown)
  • 1 cup kimchi
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds for garnish

Instructions

  1. Prepare the marinade by mixing soy sauce, gochujang, sesame oil, honey, minced garlic, grated ginger, rice vinegar, sesame seeds, and black pepper in a bowl.
  2. Coat the chicken thighs in the marinade and refrigerate for at least 1 hour (overnight preferred).
  3. Preheat the grill or grill pan to medium-high heat and grill the marinated chicken for about 6-7 minutes on each side until fully cooked.
  4. Let the chicken rest for 5 minutes before slicing into bite-sized pieces.
  5. Assemble your bowls by dividing cooked rice among serving bowls and topping with sliced chicken, kimchi, cucumber slices, and julienned carrots.
  6. Garnish with chopped green onions and toasted sesame seeds before serving.
