  • 2 medium sweet potatoes, cubed
  • 12 oz brussels sprouts, halved
  • 1/4 cup panko bread crumbs
  • 1/2 cup low sodium soy sauce or coconut aminos
  • 1/3 cup maple syrup
  • Gochujang or sriracha sauce

Instructions

  1. Preheat oven to 425°F and prepare a baking sheet.
  2. Toss sweet potatoes and brussels sprouts with sesame oil and salt; roast for 15 minutes.
  3. Mix panko with milk; set aside. In a bowl, combine ground beef, scallion whites, ginger, garlic, salt, and gochujang. Add breadcrumb mixture; form into meatballs.
  4. After roasting veggies, add meatballs to the pan and drizzle with sesame oil; bake for another 14-16 minutes.
  5. Prepare BBQ sauce by simmering soy sauce, maple syrup, vinegar, garlic, ginger, and gochujang in a saucepan. Thicken with cornstarch mixed with water.
  6. Coat meatballs in BBQ sauce; broil for an additional 2-3 minutes until bubbly.
