  • 200 g granulated sugar
  • 110 g butter
  • 1 large egg
  • 1 tbsp lemon zest
  • 210 g all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp poppy seeds
  • 1/2 tsp salt
  • For the Cheesecake Frosting: 200 g cream cheese, 75 g powdered sugar, 120 g heavy cream

Instructions

  1. Cream together the granulated sugar and butter until light and fluffy.
  2. Mix in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, salt, poppy seeds, and lemon zest.
  4. Gradually combine the dry mixture with the wet ingredients until just mixed.
  5. Scoop tablespoons of dough onto a parchment-lined baking sheet and bake at 350°F (175°C) for about 10 minutes until lightly golden.
  6. While cooling, prepare the frosting by beating cream cheese with powdered sugar and gradually adding heavy cream until fluffy.
  7. Once cooled, frost each cookie generously.
