  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 4 cups broccoli florets
  • 1 red bell pepper
  • 1 cup julienned carrots
  • 1 medium onion
  • 5 medium zucchinis (spiralized)
  • 1.5 cups low-sodium chicken broth
  • 4 cloves garlic
  • 1/4 cup liquid aminos
  • 3 tbsp oyster sauce (ensure plant-based)
  • 1 tbsp rice apple vinegar
  • 1 tsp ground ginger
  • 1 tsp xanthan gum

Instructions

  1. Season chicken strips with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through (about 5-7 minutes). Remove from skillet and keep warm.
  2. In the same skillet, add remaining olive oil and sauté broccoli, red bell pepper, carrots, and onion for about 2-3 minutes until slightly softened.
  3. In a bowl, whisk together broth, garlic, liquid aminos, oyster sauce, vinegar, ginger, and xanthan gum. Pour over vegetables and bring to a gentle boil.
  4. Return the cooked chicken to the skillet and toss everything together until well coated in the sauce. Cook for an additional minute before serving.
