  • 1 15-oz can Mandarin oranges (no sugar added; drained; ~1 1/2 cups)
  • 1/2 cup Goat cheese (crumbled)
  • 1/3 cup Walnuts (chopped)
  • 1/3 cup Dried cranberries
  • 1/3 cup Olive oil
  • 2 tbsp Apple cider vinegar
  • 1 1/2 tbsp Wholesome Yum Zero Sugar Orange Honey (or regular orange blossom honey)
  • 1/8 tsp Sea salt (to taste)
  • 1/8 tsp Black pepper (to taste)

Instructions

  1. In a large bowl, arrange the fresh spinach as the base.
  2. Gently add drained mandarin oranges, crumbled goat cheese, chopped walnuts, and dried cranberries.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, orange honey, sea salt, and black pepper until well combined.
