  • ¼ cup strawberry jam (for filling)
  • 1 cup unsalted butter (for frosting, softened)
  • 3 cups powdered sugar
  • 2 tbsp heavy cream (or milk)
  • 1 tsp vanilla extract (for frosting)
  • 2 tbsp mango purée (for frosting)
  • 2 tbsp strawberry purée (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In one bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter and sugar until light and fluffy.
  4. Beat in eggs and vanilla extract, then mix in milk and mango purée.
  5. Gradually add dry ingredients to wet ingredients until just combined; be careful not to overmix.
  6. Fill cupcake liners three-quarters full with batter, then bake for about 18–20 minutes until golden brown. Cool completely before filling.
  7. After cooling, fill each cupcake with strawberry jam using a piping bag or knife.
  8. For frosting, beat butter until creamy, add powdered sugar gradually, then mix in vanilla extract and heavy cream.
  9. Color the frosting using mango purée and strawberry purée for that sunset effect before piping onto the cupcakes.
