  • 2 cups corn kernels (fresh, frozen, or canned)
  • 1/2 cup crumbled cotija cheese (or substitute)
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and set aside to cool.
  2. In a skillet over medium-high heat, char the corn for about 5-7 minutes until slightly browned. Remove from heat and cool.
  3. In a mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper; mix until smooth.
  4. Add cooled pasta, charred corn, cotija cheese (or substitute), red onion, and cilantro to the bowl; toss gently until well combined.
  5. Taste and adjust seasoning if needed. Serve immediately or chill in the refrigerator before serving.
