  • 4 cups frozen corn
  • 1 tablespoon olive oil
  • 1 red bell pepper (diced)
  • 1 bunch fresh cilantro (minced)
  • 1 jalapeno (diced)
  • 1/2 large red onion (diced)
  • 2/3 cup cotija cheese (shredded)
  • For the Dressing: sour cream, mayonnaise, lime juice, cumin, paprika, kosher salt, chili powder

Instructions

  1. Heat olive oil in a sauté pan over medium-high heat. Add the corn and cook until slightly charred (7-10 minutes).
  2. Transfer cooked corn to a bowl and let cool slightly. Stir in red bell pepper, jalapeno, cilantro, and red onion.
  3. In a separate bowl, whisk together sour cream, mayonnaise, lime juice, cumin, paprika, salt, and chili powder.
  4. Pour the dressing over the corn mixture and gently fold until combined. Add half of the cotija cheese.
  5. Garnish with remaining cotija cheese and cilantro before serving.
