  • 1/4 cup Light Brown Sugar
  • 1/4 cup Unsweetened Cocoa Powder
  • 1/4 cup Dutch Process Cocoa Powder
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 2 Large Eggs
  • 1/2 cup Buttermilk
  • 1/4 cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • 1/2 tsp Espresso Powder (optional)
  • 1/4 cup Hot Water
  • 4 oz Andes Mints (for ganache)
  • 1/4 cup Heavy Whipping Cream (for ganache)
  • 1 cup Unsalted Butter (room temperature, for frosting)
  • 3 cups Sifted Powdered Sugar (for frosting)
  • 56 tbsp Heavy Whipping Cream (for frosting)
  • 34 drops Green Food Coloring (for frosting)
  • 2 tsp Peppermint Extract (for frosting)
  • 1/4 cup Crushed Chocolate Wafers (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugars, cocoa powders, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, buttermilk, vegetable oil, vanilla extract, and hot water until smooth.
  4. Combine wet ingredients into dry ingredients gently without overmixing.
  5. Fill liners two-thirds full and bake for about 20 minutes or until a toothpick comes out clean.
  6. For the ganache filling, melt Andes mints with heavy cream over low heat; fill cooled cupcakes with the mixture.
  7. Beat butter until creamy; gradually mix in powdered sugar and cream until desired consistency is reached. Add food coloring and peppermint extract.
  8. Frost cooled cupcakes and garnish as desired.
